Cooking With WIC Week 3 ~ Ginger-Lime Rice w/ Vegetables

This weeks WIC recipe comes from Briana over at BargainBriana.com! This was actually one of her Meatless Mondays recipes, but it’s practically free if you have WIC.  She uses School House Kitchen Ginger Lime Vinaigrette, but this can be kind of costly at Whole Foods, etc.  So I included a hand-made recipe to make it from scratch!

Ginger-Lime Rice w/ Veggies

½ cup lime juice
½ cup olive oil
3 tablespoons grated fresh ginger
3 tablespoons finely chopped onion
2 garlic cloves, minced
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon toasted sesame oil

  • Steamed Rice
  • Broccoli
  • Cauliflower
  • Tofu, (or…Chicken, Steak, Pork, etc)

Simply make as much rice as you need per serving, cut up the veggies, add your marinade, and mix!
